Super Healthy Shrimp Parmesan

Trying to eat healthy and lose weight can be so hard! The thing I struggle with most is trying to find things that taste good and don’t take me a year to make! Many healthy recipes are just so hard! They call for a million different ingredients and then take so long to make! It is just not fun! I even struggle making a simple baked chicken breast! They come out so dry and have terrible flavor, it doesn’t matter what I marinate them in. I just get so frustrated. So when I found this recipe for shrimp parmesan, I decided to check it out and you know what, it is so good!!!!

I feel like this is something that I can make quite frequently and never get sick of! I was surprised at how good it was! I served it with spaghetti squash, which made it even better and even less calories. It was also quite filling!!

Here is the recipe:

Ingredients:

2/3 C Fiber One Original bran cereal

1/4 teaspoon Italian seasoning

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/8 teaspoon black pepper

10 ounces (about 18) raw large shrimp, peeled, tails removed, deveined

1/3 cup fat-free liquid egg substitute

1/2 cup low-fat marinara sauce

1/2 cup shredded part-skim mozzarella cheese

1 tablespoon reduced-fat Parmesan-style grated topping

1 spaghetti squash

 

Spaghetti squash directions:

First cook the spaghetti squash. I cut it lengthwise and then scooped out the middle. I rubbed the inside with olive oil and placed both halves cut side down on a cookie sheet. I baked mine on 375 for about 30 minutes. After I removed it from the oven, I flipped the halves over and let them cool. While they were cooling, I prepared the shrimp!

Shrimp Parmesan directions:

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray

In a blender or food processor, grind cereal into crumbs. Transfer to a wide bowl and mix in seasonings.

Place shrimp in a large bowl and pat dry. Top with egg substitute and toss to coat.

One at a time, shake shrimp to remove excess egg and coat with crumbs. Evenly lay on baking sheet.

Bake for 5 minutes. Flip shrimp. Bake until cooked through and slightly crispy, about 5 more minutes.

Remove pan and set oven to broil.

Top each piece of shrimp with marinara sauce and a light sprinkle of cheese. Broil until cheese melts, about two minutes.

Put some spaghetti squash on a plate and top with shrimp! Enjoy!

This meal is so good!! But let me give you a piece of advice, the fiber one definitely does what you expect fiber to do, so keep that in mind when you fix this.

This recipe is 314 calories for 9 shrimp.

 

I absolutely hate that I have been so stressed that I gained weight. I look back at pictures from a year ago and I just wish I was that thin again! It has been such a struggle, but I am determined to not blow up completely during the holidays. I don’t want to start the new year trying to fit into things and not being able to and really having to watch it. I just wish there was something magic I could take to lose weight! Lol! I know that is crazy, but it is just so freaking hard!!! What are some things you have done to lose weight and feel better about yourself? I need more ideas!!!
