Low Carb Pancake Poppers

I love pancakes! Seriously, I am not a big breakfast person, but if I can have anything, I choose pancakes. I like all kinds of them. My favorite are chocolate chip! I especially like the ones from Ihop. The ones with the smiley face on them!! I could eat them quite often!

I am watching my carb intake right now and am in what you might call the detox phase of keto. I am not allowing hardly any carbs into my diet. However, when I do bring them back in, this will be a go to recipe. These are so good, they are addicting!!! These are mini pancakes that you can just pop in your mouth. They are perfect when they are right out of the oven. You can even cook them and freeze 3-4 in a ziploc and pop them in the microwave when you are ready for a treat.

Below is the recipe:

Pancake Poppers

1 1/2 C Protein Pancake Mix

3/4 C Water

3 T Egg Whites

I C Berries (use whatever you choose, I chose blueberries)

Sugar Free Maple Syrup

Preheat over to 400 degrees

In a mixing bowl combine pancake mix, water, egg whites and berries

Fill mini muffin tins with the muffin batter and bake for 8-10 minutes

Dip in sugar free maple syrup

Starting this keto way of eating has been hard. I am such a sugar freak, it has just been such a struggle! However, I am feeling better. What I mean by this is that I don’t feel so bloated and over stuffed. It is actually good feeling this way. Even though I go to bed so very hungry, I sleep so much better and wake up feeling even better knowing I did not stuff my face the night before.
