Low Carb Chicken Nachos
Trying to eat low carb and low sugar is so hard! There are so many temptations this time of year. For example, I love Mexican food. It is so my weakness! There are not many options that are low carb or low sugar for Mexican. I love nachos and trying to make low carb nachos is next to impossible. Or is it possible??? Did I quite possibly discover a low carb chicken nacho recipe???
Here I sit on a Friday night and I really want takeout. I mean that is my Friday night ritual. I work my tail off all day and if I don’t have plans, I get takeout. I live somewhere that has takeout from pretty much every restaurant and that means there is no shortage of places to eat. It is cold, it is rainy, and getting takeout and being curled up while watching Christmas movies is the perfect end to the day.
I end up deciding against takeout because there was not a great deal that would work with my diet. I decided to scour the internet and find something I could eat that is compatible with my diet. I came across these nachos that I actually made before and loved. Since I love Mexican food and that is one of my guilty pleasures, I decided on these low carb chicken nachos.
Here is the recipe. Now, if you are not in the mood for chicken, you can use beef and if you are not a meat eater, the soy crumbles will be good also. You can be as creative as you wish with the meat choices.
Ingredients
2 Chicken Breasts
1 Small bag of petite bell peppers
Chopped Black Olives
Chopped Jalapenos
Old El Paso Fajita Seasoning
Light Cheddar Cheese
Salsa
Any other toppings, like lettuce, tomato and onion
First I got two chicken breasts and boiled them until fully cooked. Once cooked, I chopped and shredded them. Once that was done, I put them in a pan with fajita seasoning from Old El Paso and cooked it according to the package directions. Once that was done, I put it in a bowl and added chopped jalapenos and black olives and mixed it up.
I let that sit and cut some bell peppers up. I cleaned them out and laid them on a cookie sheet. I tried to cute them like little scoops.
I then added the chicken mix to each pepper piece and did a tiny sprinkle of cheese on top.
I baked them on 350 for about 15 minutes and they were perfect!
I served them up with salsa and I do feel that if you want to, you can add other nacho toppings to them, like lettuce and tomato, as long as they are healthy, of course! I actually loved these and I was surprised. They were very good and even better with salsa. I must tell you, I did not feel guilty after eating them and you know that bloated feeling you get when you eat the usual nachos?? None of that here!!! I got to eat low carb chicken nachos, a Mexican food, and not feel bloated!!!! I look forward to what I am going to share with you next week.
