Spinach Feta Egg Bites

One thing no one tells you about hitting the age of 40 is how freaking difficult it is to lose weight! I mean, it used to take me a week to lose 5 pounds and now I am lucky if I can get it off in a month! I am trying my best to eat more balanced and eat when I am hungry and make better choices, you know the drill! When I found the recipe for these egg bites, I was hooked. They are super easy to make and the best part, you can pop them in the freezer, when you want one or two for breakfast, you take them out and stick them in the microwave and in about a minute, they are ready! They are so filling and satisfying. I made mine with spinach and feta, but you can put anything in them you want, just think about what you like in omelets and you are all set!

I know it is hard when you are trying to lose weight and everyone comes at you with what works for them and you are so desperate that you try it. I am not here to give you weight loss tips, but this recipe is definitely going to help you get rid of that midsection spread and you will not starve!

Here is the recipe for the Spinach Feta Egg Bites

6 Eggs or 16-ounce carton egg whites

Step 1: Preheat oven to 350

Step 2: Break eggs open into a bowl and beat until mixed if using whole eggs; for egg whites, just pour into the bowl

Step 3: Saute spinach, you can put it in fresh, but I like to saute it before putting into the bites

Step 4: Add spinach and however much feta you want to the eggs; some people put the spinach and feta into the bottom of the muffin tin first, I will say it can make it easier to add the egg this way and makes prettier muffins

Step 5: Grease your muffin tin

Step 6: Pour in the egg mix

Step 7: Bake for 15 minutes

Enjoy!

You can eat just the egg bites or you can enjoy them with a side of berries and even a piece of whole-wheat toast! These do make the perfect breakfast that is good and healthy for us women trying to shed our middle! Let me know if you try these and if you make any modifications to the ingredients!
