Low Carb Crunchy Cheddar Chicken Recipe
Losing weight, ugh!!! I think once you hit 40 your metabolism just starts crawl and never picks up. Those five pounds that used to take two weeks to lose, now take 2 months! I get my blog pics made and my midsection looks like an innertube. I am told it just gets worse as you get older! So, now it is my mission to get this weight off!
I am really trying to watch my sugar, which is super hard when sugar is one of your favorite food groups. So in my quest to eat better, I discovered new things to eat and I actually feel better. I was gifted like 40 different bags of low carb chips from Quest. They are the perfect yummy treat and provide that crunch that we all crave at times, without jumping onto my midsection. I have begun to look into new recipes to try with these chips and I discovered one that I think will be a go-to recipe.
You see, one thing we miss when watching carbs is any kind of fried chicken or meat for that matter. This recipe is low carb and healthy and you get that crunchy chicken you have been missing! Trust me, this is so good! I decided to share it with you and you can try it yourself. I baked mine in the oven, however, if you have an air fryer, I bet it would be awesome in there!
Let’s get to the recipe!
1 bag of Quest cheddar and sour cream chips
1 t garlic salt
1 T olive oil
8 oz. plain, low-fat Greek yogurt
Chicken tenders
– First, crush the chips, you can do it in a bowl or in the bag
– Once they are crushed, add the garlic salt and olive oil and mix well
– Coat each chicken tender with the yogurt, once the tender is coated, dip it into the chip mixture
– Place on a lightly greased cookie sheet or baking pan
– Bake on 350 for 20-30 minutes
Dig in!!
