Keto/Low Carb Mississippi Chicken
Let me just tell you, this keto/low carb life I am trying to live is quite stressful. I think I have said this before, but I will say it again, I am a sweets addict!!! I love them and could honestly eat them at every single meal. I am that person who would eat dessert first and then dinner, oh, and then dessert again!
So, when I decided to give up carbs, it was such a struggle!!! I mean the first couple days, I was ready to kill someone. I could not figure out why I was so ill or wanted to cry every five minutes! Then I googled what happens when you cut carbs and lo and behold, there was every single symptom I was having.
Now, I know what you are thinking, you are thinking how every time you google symptoms you feel as if you have the illness. That is true to an extent. This time, I was feeling the symptoms and so I knew that there was something going on and I wondered why I was such a mixed bag of emotions all of a sudden!
They say that sugar addiction is similar to drug addiction and that the withdrawals can be just as bad. After I cut out what I did, I truly agree with this statement.
I am on the lookout for some great keto/low carb recipes. I have been on Pinterest pinning away and then I saw this recipe for a Mississippi pot roast. This recipe always looks so good when I am on Pinterest messing around and I see the roast with the pepperoncinis on it. It just looks so yummy! If you have ever been on a recipe search on Pinterest, I am sure you know what I am talking about.
So, I was on the hunt for the perfect recipe for my new keto/low carb lifestyle and I saw this recipe. I am not the biggest fan of red meat, so I wondered if it would be good with chicken. I did a little research and decided to try it. And I also found out that it is low carb, so score!!!
After I cooked it, I was amazed! It was so yummy! The meat was so tender and it was not dried out at all. I loved it and it had such a good taste! I served it with some cauliflower rice! I poured some of the gravy over it and it turned out great. I also have fallen in love with roasted vegetables. I love those little peppers that are in the produce section. I slice mine up and put some olive oil and garlic salt or another seasoning on them and roast them for about 15-20 minutes at 425. They are done just perfectly that way and have the right amount of flavor.
I thought you guys might appreciate this, whether you are watching your weight or not, it is such a fantastic meal!!!
Mississippi Chicken
3 pounds boneless, skinless chicken breasts
1 (1oz.) package au jus gravy mix
1 (1oz.) package dry ranch dressing mix
1/2 jar pepperoncini peppers or banana peppers, drained
1/2 C (1 stick) unsalted butter
Salt and pepper to taste
1 – place chicken breasts in slow cooker and season generously with salt and pepper
2 – sprinkle au jus mix and dry ranch mix over the chicken, then top with peppers
2 – place butter on the chicken, then cover slow cooker and cook on low for 6-8
I told you how I served it and with the sides I chose, but you can be creative and choose what you want, that is low carb/keto or not. This is a good meal even if you are not watching your weight. It just does not taste low carb/keto at all!!!
