Strawberry Cake Mix Cookies

On every holiday, I like to create a special holiday-themed dish, typically it is something fun and usually something sweet and of course, something that resembles the holiday. Today is Valentine’s Day and since it is Valentine’s Day, I have a Valentine’s Day treat to share with you. These Strawberry Cake Mix Cookies are nothing short of amazing and they are super easy to make.

The main ingredient in these cookies is, you guessed it, cake mix! I first discovered cake mix cookies when I was a Home Ec teacher a hundred years ago. I always tried to find easy and fast recipes for my students and these cookies are at the top of the list. I did get the basic recipe and doctored it up with some extra ingredients to make them taste even more spectacular. If you are looking for something fun and easy to make for the holidays, these cookies need to be at the top of your list.

Here is the recipe:

Strawberry Cake Mix Cookies

1 Strawberry Cake Mix

1 t Baking Powder

2 large Eggs

1/3 C Vegetable Oil

1/2 t real Vanilla extract

2 C White Chocolate Chips

1 – preheat oven to 375

2 – mix strawberry cake mix and baking powder first

3 – once these two are mixed, add the eggs, oil and vanilla extract and be sure to mix well until all ingredients are mixed thoroughly

4 – fold in the white chocolate chips

5 – roll the cookie dough into rounded balls and place on parchment-lined cookie sheets

6 – bake for 8-10 minutes and when done remove from oven and let cool and enjoy!
