Zucchini Chips
I am really trying to eat healthy. I mean, really trying. But, I still have my cravings. You know, salty and then sweet and then some more salty! While I am trying to eat healthy and keep my weight down, I am forever looking for healthy snacks to keep me satisfied. I found this recipe and decided to try it out. It is for baked zucchini chips that are covered in parmesan cheese and baked to a perfect crisp! You can even dip them in marinara sauce for an added touch. Wow! That is just like eating chips and dip! So, anyway, I found this recipe and wanted to try it out and let you know what I thought and well, kind of tell you what I did wrong, what I did right and just give you some tips for these yummy snacks!
Here is the recipe:
3-4 medium sized zucchini
Parmesan cheese or any other Italian blend
Marinara sauce for dipping, sugar free if you are watching your carb intake!
You get the zucchini and slice them 1/4″ thick.
Once they are sliced, you place them on a cookie sheet and sprinkle them with the cheese.
Once you are done with this, you bake them at 425 for about 15-20 minutes. Take them out, let them cool and you are ready!!
Here are my mistakes:
1 – I cut them too thick! Since I cut them too thick, I didn’t exactly get the chip texture from them. They were just too thick
2 – I did spray my pan with Pam and I thought I would spray the zucchini slices prior to putting the cheese on them. I thought maybe the spray of Pam would help them crisp up when they cooked. Big mistake! They were way too soggy!!! Once again, I didn’t exactly get the chip texture I was looking for!
I do like zucchini, so I still ate them and they were pretty good. Tasted a little like a low carb pizza! I ate some and quite honestly, so did my dog, Winston! They are definitely something I would bake again, but without the mistakes I made the first time. But hey, you live and you learn!!!
Trying to lose weight can be so hard, but when you have good snack ideas like this, it just makes it so much easier to do!
It is Wednesday and this week has just been super crazy with work!!! I am up against a tight deadline of 4:00 PM on Thursday!!! Can I do it??? I sure think I can!!
